Hi, so this is the first of the recipes on my blog. I got the inspiration for this from the Domestic Goddess herself; Nigella Lawson. It's one of my favourite recipes and it never seems to fail, just a great all rounder - your friends won't forget these easily though so be prepared for requests!
Ingredients:
160g Plain Flour
30g Cocoa Powder
1tsp Salt
1tsp Bicarbonate of Soda
140g Broken Milk Chocolate (Or dark if you prefer)
125g Butter
125g Brown Sugar
1tsp Vanilla Essence
1 Egg
400g Chocolate chips in white, dark and milk
Method:
1. Preheat the oven to 170C.gre
2. Break up the chocolate in to small chunks and place in a microwavable bowl - then microwave for intervals of 30 seconds until the chocolate is liquid in texture.
3. In a small bowl sift the cocoa powder and the flour then add the salt and Bicarbonate of Soda.
4. Once you've done the dry ingredients place the sugar and butter in to a separate bowl and cream together. Really beat it to make sure you get lots of air in to it. It should look nice and fluffy.
5. Then add the melted chocolate and beat the mixture again to make sure it's all combined!
6. Next, beat the egg in the bowl that you melted the chocolate in (to save on the washing up and to get all the chocolate you can out of the bowl!) Add this to the butter and sugar along with the Vanilla Essence.
7. Then gradually add the dry ingredients to the mix stirring carefully.
8. Finally add the chocolate chips! The mixture should be slightly sticky, so don't be afraid that the mixture is too wet. However, you could always add some flour if it's really too wet or some milk if it looks dry.
9. Then equally divide the mixture on to some baking trays. Make the mixture in to balls - but do not flatten! Make them as big, or as small, as you like. I would say the mixture stretches to 12 medium sized cookies.
10. Place in the oven for 10-15 minutes, check on them regularly so that they do not burn! Then take them out of the oven when they're ready but leave them on the tray for 3-5 minutes before transferring them to the cooling rack, this is so that they won't fall to pieces!
